Summer Spreads

We’ve decided to make a good many cold dishes because of the heat. It’s appealing to minimize oven use in the summer, so we’ve been combining a lot of raw and/or leftover ingredients for some great meals. We’ve made a lot of salads, which can be satisfying by themselves, but we’ve also used accompaniments like polenta fries, a variety of antipasto items and tofu and rice paper to make them more complete meals. One of our favorite activities, after a morning of gardening and/or yard work is sitting down to a fresh, cold lunch and a chilled white or rose wine.

    The polenta fries sound great! Are they hard to make? My polenta is always more of a mush consistency than firm – I do like it mushy ;p
