More Fun With Tomatoes

As mentioned in the previous post, we made a great tomato-basil salad and tomato sauce (with cherry peppers, onions and olives) to go with polenta, greens and panko-crusted zucchini and eggplant. And last night, Nicole made stuffed Cubanelle peppers with onions, tomatoes, soy mozzarella, tofu sausage and quinoa. A lot of the veggies we used were from our garden.
