Tomato Time

You know summer hits when the tomato harvest comes. It was a terrible growing season, but most of our tomatoes have survived, and we’re trying to cook a lot with them. We made a kale salad and had chick pea fries tonight. Some of the sauces we made had a tomato base (onion chutney and tomato-caper-parsley sauce). In addition, we made a tomato-basil salad (which we’ve been doing frequently for lunch), and tomato sauce to go with polenta, greens and panko-crusted zucchini and eggplant.
